Bon Appétit ~

Since coming to live in the Drum residents two years ago I have come to develop a love for the culinary arts.  Here is one of our favorite new recipes (courtesy of my mom).

West African Peanut Soup:

2 TBS Peanut oil

1 Large yellow oinion, diced.

3 Garlic cloves, minced.

¼ tps crushed red pepper

2 TBS grated Ginger.

28 oz can diced Tomatoes.

1 quart chicken broth (4 cups)

1 cup peanut butter

2 cups baby spinach greens or kale (if kale remove tough stems)

1 LBS raw shrimp, cleaned.

¼ cup chopped fresh cilantro.

Heat oil in a large saucepan over medium-high. 

Add onion, garlic, red pepper and ginger. 

Saute until the onions are tender, about 4 min.

Add tomatoes, with juices and chicken broth bring to simmer.

Add peanut butter, stirring until it dissolves into the soup.

Add greens and simmer until wilted, 3 min.

Add shrimp and simmer until cooked through, 5 min.

Season with salt and pepper, stir in cilantro.  Serves 6.  Garnish with peanuts (optional).
